In the Tuscan Maremma, pasta is not just a dish, it tells a story of land and know-how. Among them, the pici stand out: these thick, handmade spaghetti made from water, flour and olive oil are a proudly defended specialty. Their rustic texture is perfect for catching generous sauces, like the famous cinghiale alla cacciatora, this wild boar simmered with wild herbs, or the ragù bianco di maiale. They can be found notably at Osteria Fra Paolino, where tradition is savored for around 30 euros per person, or at La Solina, which also offers tortelli maremmano al ragù from 15 euros.

These dishes reflect a terroir where cuisine is rooted in the cycle of the seasons and local products. Wild boar, abundant in the region's forests, is an undisputed star, as are the vegetables from the kitchen garden. These establishments, often family-run and nestled in bucolic settings, offer an authentic culinary experience. For example, La Frasca, in Montemerano, offers no-nonsense Maremma cuisine, a few minutes' drive from Saturnia, and highlights local products, in a Tuscan countryside atmosphere.
