Our tip

Tuscan cuisine in Maremma has nothing to do with the watered-down version found in the tourist restaurants of Florence or Siena. Here, it remains a peasant cuisine: acquacotta (wild vegetable and poached egg soup, the emblematic dish of the shepherds of Maremma), pici hand-rolled, ribollita in winter, pappardelle with wild boar all year round. Tuscan saltless bread — inherited from a medieval rivalry with Pisa over the salt tax — still underpins the fettunta (tartine with fresh olive oil) and summer panzanella.

Our selection of Tuscan restaurants in Maremma favors family trattorias that prepare these dishes according to recipes passed down from generation to generation, with local products: olive oil from the estate or a nearby producer, pecorino di Manciano, wild boar charcuterie, estate wine. You often eat better there, and for less money, than in the most popular spots in the tourist towns.

The best time to taste this cuisine in its richest version is autumn: truffles, porcini mushrooms and game (wild boar, pheasant) dominate the menus from October to December, while the farm tables of nearby agritourismos often offer their own seasonal menus.
