Comment on noteThe wine
I invite you on a sensory journey to the heart of Tuscany, where time seems suspended. This Vin Santo from Boscarelli is not just a wine; it is a liquid tradition, an amber caress that tells the story of ancestral know-how and the generosity of a blessed land.
At the foot of the Montepulciano hills, the Boscarelli estate passionately cultivates the grape varieties that will give birth to this treasure. It is here, in this prestigious Vin Santo di Montepulciano DOC appellation, that the Malvasia, Trebbiano and Grechetto, carefully harvested, begin their metamorphosis. The 2016 vintage I discovered is the fruit of patient craftsmanship, where every step is designed to concentrate the best of the grape.
After the harvest, the bunches are delicately laid out on racks, in airy places, for an appassimento process that concentrates sugars and aromas. This ancestral method is the key to its richness. The slow fermentation then takes place in small wooden casks, the caratelli, where the wine will age for a minimum of three years, developing its complexity and unique character. Its intense amber color is already a promise. On the nose, you will be enveloped by a complex bouquet: notes of almond, honey and dried fruit dominate, enriched by nuances of caramel and sweet spices. On the palate, it is a perfect harmony between sweetness and freshness, with a velvety texture that coats the palate. The flavors of dried fruit and honey linger in a long, persistent finish, leaving a warm and complex sensation.
This Vin Santo is an invitation to sweetness, perfect for ending a meal in style. Picture it alongside dolci secchi, those traditional dry biscuits, and of course, crunchy cantucci. It also pairs wonderfully with formaggi stagionati, aged cheeses, where its richness elegantly contrasts with their character. It is a wine for meditation par excellence, to be savored slowly, to prolong the pleasure and enjoy every moment. Let yourself be carried away by this gem of Tuscany, an unforgettable experience for the senses.
