Comment on noteThe wine
Imagine for a moment the Tuscan sun captured in a glass, an enveloping sweetness that caresses the palate. This vino liquoroso, Santelmo Serristori, is an invitation to discover a lesser-known but equally enchanting facet of the winemaking of this blessed region.
It is in the heart of Poggibonsi, in the province of Siena, that the Serristori winery crafts this very special wine. Far from the Chianti Classico you may know, we are here on a different terrain of expression, where the Malvasia and Trebbiano grape varieties reveal another dimension. The tradition of fortification, through the addition of alcohol, makes it possible to lock in this aromatic richness, followed by patient aging in wooden barrels.
When you bring your nose close, you are greeted by a rich texture of ripe fruits, honeyed notes, with subtle accents of spirit-soaked fruits and a discreet vanilla. On the palate, the sweetness is perfectly integrated, the body is round and the texture velvety. What always surprises me is the way the alcoholic warmth is contained by a lively freshness and a sapidity that balance the whole. The persistence is long, never cloying, leaving reminiscences of caramel and candied citrus zest on the palate.
To fully appreciate this Santelmo Serristori, I recommend serving it slightly chilled, in sweet wine glasses. It is a wine for meditation par excellence, perfect for ending a meal gently, leaving an enveloping and soothing sensation. But do not be mistaken, it also lends itself to more concrete pairings.
Think of aged cheeses, dry pastries or desserts made with dried fruits and cream. It can even successfully accompany dishes based on foie gras or dark chocolate desserts, offering a most pleasant contrast. This wine is a beautiful discovery, a gourmet parenthesis that will transport you directly under the Tuscan sun, even if you are far from the hills of Siena.
