The wine
In the Campinovi Bianco I find a singular way of approaching Tuscany: not through a powerful red, but through a white where the freshness of citrus meets wood aging. The 2022 vintage blends Trebbiano and Malvasia, under the IGT Toscana Bianco appellation, and comes from vines farmed organically. It is a wine worth taking the time to listen to: its notes unfold between lemon, mandarin, dry hay, subtle honey and vanilla.
The Dievole estate lies between Siena and Florence, in the heart of the Chianti Classico landscape. Its name means "if God wills it," and the history of the place is presented as an ancient dialogue between nature and human activity. Here, attention to the environment goes hand in hand with a pursuit of wines that are fresh, intense and flavorful. The Campinovi Bianco comes from plots at about 300 meters above sea level, on silty-sandy soils rich in gravel. The vines average fifteen years of age and are certified organic.
In the cellar, fermentation takes place spontaneously, with indigenous yeasts, in temperature-controlled concrete vats. The wine then spends twelve months in large French oak casks, followed by three months in bottle before release. This sequence of stages gives this white a profile shaped by wood, without erasing the fresh accents noted at tasting. In the glass, its straw-yellow color shows golden highlights. The nose brings together lemon and mandarin, joined by dry hay, a delicate hint of honey and a touch of vanilla. On the palate, freshness and elegance come with a light honeyed softness. The finish is long, according to the available tasting notes, and extends these impressions without breaking the balance between fruit, freshness and oak.
I would serve it with a white fish or an oily fish, two pairings that match the suggestions made for this wine. Soft cheeses can also find their place alongside it: their delicate texture complements the honeyed softness, while the citrus freshness brings a welcome contrast. To enjoy its nuances, take the time to let it open in the glass and return to its notes, from lemon to vanilla. This Campinovi Bianco 2022 can accompany a relaxed meal, when you want a Tuscan white with precise aromas and confident oak character. A quiet invitation to see Chianti differently, glass after glass.
