Comment on noteThe wine
Imagine for a moment: a white wine that has traversed the decades, carrying within it the wisdom of time. This Chardonnay from the Tenute del Cabreo is not just a bottle, it is an invitation to a sensory journey, an encounter with the liquid history of Tuscany.
It is in the heart of the Panzano hills, in Greve, that the Folonari estate, under the aegis of Vigneti Tenute del Cabreo, gives birth to this unique wine. Tuscany, often associated with its emblematic reds, reveals here another facet of its terroir, a surprising ability to magnify Chardonnay. This 1991 vintage, made entirely from Chardonnay, is the fruit of particular attention paid to every stage of its creation.
Its color, you can already guess, is that of a wine that has matured, displaying golden hues inviting contemplation. On the nose, it is not the impetuosity of youth that expresses itself, but a mature and complex bouquet. You will discover aromas of exotic fruits, white flowers, but also deeper notes of hazelnut and a mineral touch that signs its elegance. A light vanilla and buttery accents, the legacy of a partly wooden fermentation and meticulous bâtonnage, complete this olfactory picture. On the palate, this wine offers a soft and perfectly integrated structure. Its acidity, softened by time, gives way to a discreet yet present persistence, a balance that testifies to its years of aging in wood on lees, then in bottle.
This mature Chardonnay calls for carefully considered food and wine pairings. I recommend it with an oven-baked fish, whose richness will be balanced by the wine's finesse. It will also pair wonderfully with poultry or well-seasoned white meats. For cheese lovers, soft cheeses or hard cheeses will find in it an ideal companion, creating a delicious contrast between richness and subtlety. It is a wine for special moments, a tasting that leaves a lasting impression, or a prized piece for your personal collection, offering a rare and memorable experience.
