Comment on noteThe wine
I invite you on a sensory journey to the heart of Tuscany, where an exceptional white wine reveals itself. This Chardonnay, from the Tenute del Cabreo, is a discreet gem that whispers the story of its terroir with every sip. Let me guide you through its nuances, its aromas and its very particular character.
Nestled in the heart of the Colli di Panzano in Chianti, this estate, Tenute del Cabreo, under the aegis of Folonari, is a jewel case for this 100% Chardonnay. The 2007 vintage, a matured white, bears witness to an elegant maturity. The vinification was designed to preserve the purity of the fruit: a soft pressing, followed by cold settling for 24 hours, then fermentation in steel tanks and barrels. It is this marriage of tradition and precision that gives birth to such a singular wine.
Its robe, a straw yellow with golden highlights, is a visual invitation. On the nose, you will discover a complex and refined bouquet: notes of chamomile, dried tea, honey, sage, cedar, lemon zest and a light touch of toasting. On the palate, this wine offers a balanced body, perfectly calibrated acidity and a sapid texture that prolongs the pleasure. You will find aromas of white-fleshed fruit, ripe citrus and subtle floral nuances. This is a wine that has evolved with grace, revealing measured expressiveness and remarkable depth.
This 2007 Chardonnay is an ideal companion for delicate dishes. Imagine it alongside baked fish, crustaceans, poultry or mushroom-based dishes. It will enhance delicate flavors and light sauces. You can also pair it with soft cheeses. To appreciate all its nuances, I recommend serving it between 10 and 12 °C and opening it just before tasting.
This wine is a true discovery, an authentic expression of Tuscany. It is perfect for a special occasion, an intimate dinner or simply to treat yourself. It is a wine that tells a story, that of a terroir, a know-how and a vintage. Let yourself be charmed by the finesse and elegance of La Pietra 2007, an experience I highly recommend.
