Maremma has historically been a land of livestock farming — the vacca maremmana, a rustic cattle breed with long horns that already grazed freely in the days of the butteri , gives a characterful meat found in the region's best grilled dishes. The bistecca alla fiorentina, a thick cut cooked on a wood-ember grill, remains the reference — but the region also offers grills of wild boar, of pig cinta senese , and of hill lamb.
