When is the best time to eat truffles in Maremma?

The best time to eat truffles in Maremma, c'est généralement de late October to December, especially if you're looking for white truffle. Its harvesting season in Tuscany runs from 1st October to January 15, but its presence on menus depends on the year's conditions and supplies. For winter black truffle, aim rather for mid-November to March.

There are also truffles outside the cold season: the scorzone, with a more discreet aroma, is mainly harvested in summer, then in autumn; the marzuolo, associated with the coast of the Province of Grosseto Maremma, appears rather from January to April. These are not the same flavors or the same dishes as the autumn white truffle. If you travel in summer, you can therefore find some, but ask which variety is served: "truffle" does not necessarily mean white truffle.

At the restaurant, call before booking and ask whether the truffle is fresh, which variety and which origin. The legal season guarantees neither an abundant harvest nor availability in every establishment. For the white truffle, menus are often more expensive; check the surcharge and whether it is calculated per portion or by weight.

To truly taste what the truffle brings, choose a simple preparation rather than a dish drowned in cream: it likes to have the stage to itself.
