Comment on noteThe wine
Imagine for a moment: a bottle that has crossed the decades, a rare vintage that whispers stories of Tuscany. This 1983 Chardonnay from Folonari is not just a wine, it is an encounter with time, an invitation to patience and discovery.
This exceptional white wine was born on the lands of the Tenute del Cabreo, in the heart of the Colline di Panzano in Chianti, in Tuscany. Although the IGT Toscana appellation offers great freedom, it nonetheless guarantees an origin and a quality rooted in this prestigious terroir. The Folonari estate, with its rich history, has managed to capture the essence of this region in every drop of this 100% Chardonnay.
The vinification of this 1983 vintage followed a meticulous process: a gentle pressing of the grapes, followed by 24 hours of settling. The fermentation took place in stainless steel tanks and wood, offering complexity from the earliest stages. Then, the wine matured for 12 months in tonneaux, those large-capacity casks that allow a subtle exchange with the wood without masking the fruit. A refinement of at least six months in bottle then perfected its balance, preparing this Chardonnay for its long journey through time.
Over the years, this Chardonnay has developed an aromatic profile of great richness. On the nose, you will discover notes of chamomile, dried tea and honey, interwoven with touches of sage, cedar and lemon zest. It is an evolved bouquet, where the primary aromas have given way to a fascinating tertiary complexity. On the palate, you can expect a softer texture, an acidity mellowed by time, offering a velvety and harmonious experience. The color, for its part, will have taken on golden hues, testifying to its age and maturity.
This 1983 Chardonnay is a bottle to cherish and savor. I recommend pairing it with dishes with clear and delicate flavors. Think of rich fish, aged cheeses or poultry in a light sauce. Serve it at a moderate temperature, and do not hesitate to decant it carefully if you deem it necessary, in order to reveal all its splendor. It is the ideal wine for a special occasion, a moment of contemplation or an intimate dinner where every sip is a story. Let yourself be carried away by this testament to time, a true pearl of Tuscany.
