Unleavened bread, or matzah, is a flat, unleavened bread traditionally eaten during the Jewish Passover. In Maremma, you will rarely find it in conventional bakeries. Its presence is linked to the history of the Jewish community of Pitigliano, the "Little Jerusalem". This bread symbolizes their exodus and their faith. If you visit the Synagogue of Pitigliano and its museum, you will understand its cultural and religious significance. Don't expect to taste it everywhere; it's a niche product, tied to a specific tradition, which you may sometimes find in local delicatessens or during Jewish holidays.
