Where to buy real artisanal bottarga in Tuscany?

To buy real artisanal bottarga in Tuscany, first go to I Pescatori di Orbetello, at Via G. Leopardi 9, Orbetello : the cooperative fishes in the lagoon and processes its mullet bottarga. Call 0564 860288 before going there to confirm that direct sales are open and that some is left. Production depends on mature roe, especially between August and September ; out of season, the stock may therefore vary.

Another option, in the village: Piùpesce, Via Donatori del Sangue 32, which carries the products of the Pescatori d'Orbetello and can help you out if you don't stop by the cooperative's sales point. Call 0564 896923 to check availability. To recognize the product you're looking for, ask for a whole bottarga of lagoon mullet/cefalo from the Orbetello lagoon, not a grated preparation or a bottarga from another origin. You won't necessarily find a fixed price online: the price varies according to weight and piece, so it's better to ask by phone.

Bottarga is the little souvenir that turns very simple pasta into a lagoon dinner; keep it whole and grate it at the last moment, it will have much more character.
