What is the difference between industrial pork and Cinta Senese?

The difference lies mainly in the race and the farming method : "industrial pork" generally refers to pigs from breeds selected for rapid growth and raised intensively, while Cinta Senese is a rustic Tuscan breed, traditionally raised outdoors or in semi-freedom. Note that "industrial pork" is not a precise designation: practices vary from farm to farm. On the palate, Cinta Senese often has redder and more marbled meat, with more fat; it may therefore seem more flavorful and juicy, but also less lean. It is not automatically a better choice for everyone: for very lean meat, a regular cut of pork may be more suitable. And the breed alone does not guarantee outdoor farming: look for the label Cinta Senese DOP, which certifies compliance with a set of specifications and production in Tuscany. This meat is generally more expensive; also compare the cut and the preparation, since a tenderloin and a chop will not have the same fat or the same result when cooked.

A grilled chop and a ragù do not tell the same story, even with the same meat: the recipe matters as much as the name on the label.
