5. What is the difference between Pecorino Toscano DOP and Pecorino di Manciano?

The main difference is that Pecorino Toscano DOP is a protected designation, while "pecorino di Manciano" generally refers to a cheese made in Manciano or by the Caseificio Sociale Manciano, without being in itself the name of a distinct DOP. Manciano is indeed located within the authorized zone for producing Pecorino Toscano DOP: a cheese made there can therefore carry this designation if it complies with its specifications.

The DOP guarantees in particular an origin of the milk and defined production and aging steps. It exists in a fresh version, with at least 20 days of aging, or stagionata, with at least 120 days : the first is milder and softer, the second firmer and more pronounced. The Caseificio of Manciano also makes traditional or flavored pecorinos that are not necessarily DOP; their taste then depends on the recipe, the aging and the ingredients.

In practice, look at the label: if it bears the name Pecorino Toscano DOP and the red and yellow European logo, you are buying the certified cheese, whether it comes from Manciano or another authorized producer. If it only says "pecorino di Manciano", do not assume it is a DOP: check the manufacturer and the aging time. The name of the place, on its own, does not guarantee a more intense taste or a higher quality.

To decide without being impressed by the name, ask to taste two pecorinos side by side: sometimes the favorite is not the one you bet on!
