How to taste Bianco di Pitigliano in the tuf caves?

To taste the Bianco di Pitigliano in a tuf cave, book a guided tour rather than relying on a cellar open at random: the "Pitigliano Underground" experience lasts about 2 hours, costs around 15 € and combines a visit to ancient cellars with a tasting of local wines. Ask when booking whether the Bianco DOC is indeed on the program, as the selection may vary.

To be sure of tasting this appellation, also contact the Cantina di Pitigliano : its tastings, by reservation, range from about 10 € to 30 €. The 18 € package includes two wines and local products; the visit to the historic cellar carved into the tufa, via Vignoli, is arranged separately and by agreement. The tasting point is via Nicola Ciacci, about 900 m from the historic center : so check where you need to go. Taste the white wine calmly, then compare it with the salumi or cheeses offered; the pairing depends on the package chosen.

The tufa can easily steal the show; still, give it a bit of competition in the glass, as befits a curious little wild boar!
