Comment on noteThe wine
Imagine for a moment a wine that has traversed time with rare elegance, a bottle that whispers stories of Tuscany. This is exactly what you will find with the Cabreo Il Borgo 1995, a mature and refined expression of the hills of Greve in Chianti.
This wine was born on the lands of the Tenute del Cabreo, the Folonari estate, nestled in the heart of the hills of Greve in Chianti. It is here, in this privileged terroir, that Sangiovese (70%) and Cabernet Sauvignon (30%) unite to create an aromatic symphony. The winemaking process begins with fermentation in steel tanks at a controlled temperature of 26-28°C, followed by maceration for 15 to 18 days, allowing optimal extraction of aromas and tannins.
When I tasted it, its color immediately caught my attention: a deep garnet with subtle orange hues on the rim, a sign of its venerable age. On the nose, you will discover notes of red underbrush fruits, more discreet than in a young wine, but of great finesse. Earthy touches and soft spices complete this delicate bouquet. On the palate, time has softened the tannins, making them silky and unobtrusive, while retaining a beautiful freshness thanks to a persistent acidity. The aromas of red rose, marasca cherry and incense blend with more complex nuances of chocolate, tobacco and vanilla, revealing the richness of its aging. This wine spent 16 to 18 months in barrique, then a minimum of 6 months in bottle, giving it this complexity and harmony.
This Cabreo Il Borgo 1995 is a wine that pairs wonderfully with medium-bodied dishes. I recommend it with a faraona ripiena con porcini e mirtilli, a guinea fowl stuffed with porcini mushrooms and blueberries, a documented pairing that promises a memorable tasting experience. It will also be perfect with braised meats, a cacciagione cooked with moderation, or aged cheeses, but not too intense. Serve it at a slightly cool room temperature to fully appreciate its complexity and evolution. It is a wine that tells a story, an invitation to savor the passage of time with elegance.
