Good

A Tuscan IGT from Greve in Chianti blending 70% sangiovese and 30% cabernet sauvignon, aged 16 to 18 months in barriques. Its limitation: no distinction or guide mention, for a price of €39.18 with no marked advantage.

  • Typicity & terroir25 %7,2

Sangiovese 70% and Cabernet Sauvignon 30% on the hills of Greve in Chianti, Toscana IGT: a genuinely Tuscan anchor, but the IGT remains generic and the Bordeaux cabernet weighs 30%.

The wine

Cabreo Il Borgo: The Tuscan soul in red

Imagine yourself in the heart of Tuscany, where the hills roll under the sun. This wine, Cabreo Il Borgo, is an invitation to that escape, a balanced and profound expression of its terroir, whispering to you stories of vines and passion.

The hills of Greve, cradle of a great wine

It is within the Colli di Greve in Chianti, in the heart of Tuscany, that the Folonari house, through its Vigneti Tenute del Cabreo, gives birth to this Cabreo Il Borgo. This estate, rooted in the region's wine-growing history, perpetuates a craftsmanship that sublimates Sangiovese. For this 2022 vintage, the blend is bold and successful: 70% Sangiovese, Tuscany's emblematic grape variety, unites with 30% Cabernet Sauvignon. This alliance gives the wine a singular personality, combining the vigor of the local terroir with an international touch.

When you pour this Cabreo Il Borgo, you discover a compact ruby color, a promise of beautiful density. On the nose, a complex bouquet unfolds before you: red rose and maraschino cherry mingle with notes of incense, then evolve toward deeper aromas of chocolate, tobacco and vanilla. On the palate, the wine reveals a balanced personality. Fermentation in steel tanks at controlled temperature (26-28°C) and maceration of 15 to 18 days allowed the best of the grapes to be extracted. The aging, meanwhile, took place over 16 to 18 months in barriques, followed by 6 months in bottle. The result is a supple tannic structure, beautiful freshness and a medium body that makes each sip harmonious and pleasant to drink.

Delectable pairings for a special moment

This Cabreo Il Borgo is an ideal companion for your meals. I particularly recommend it with a faraona ripiena di porcini e mirtilli, a dish that will sublimate its complex aromas. But it also lends itself wonderfully well to everyday dishes, white meats, charcuterie and medium-aged cheeses. Imagine it also with pasta in ragù or more flavorful dishes, without ever overpowering them. Serve it at a moderate temperature, in a generous glass, so that all its aromas can fully express themselves. It is a wine to be savored in the medium term, perfect for an evening with friends or an intimate dinner, offering an authentic and unpretentious Tuscan experience.

Tosco, your AI wild boar, recommends this 70 % Sangiovese and 30 % Cabernet with a guinea fowl stuffed with porcini and blueberries: the dish echoes its Tuscan profile while letting its structure shine.
