Where to find the best Scottiglia in Tuscany?

To taste a scottiglia in its home terroir, go to the Locanda La Scottiglia, in Pescina, a hamlet of Seggiano, on Monte Amiata. Here, it is not a generic dish added to the menu for visitors: the local version is prepared with pork, beef, turkey and chicken, simmered for more than eight hours, then served on homemade bread with a drizzle of Seggiano oil. It is a rich and meaty dish, rather hearty; if you are looking for a light or vegetarian recipe, this is not the right choice.

The locanda is located about 5 km from the Val d'Orcia and at 30 minutes from Montalcino, which makes it a convenient stop if you are exploring southern Tuscany. The restaurant is advertised as open all year round, for lunch from 12:30 pm to 2 pm and dinner from 7:30 pm to 9:30 pm, sauf le mercredi. The cuisine follows the seasons and the menu is not fixed: call before setting off to confirm that the scottiglia is indeed being served and to find out its current price. Reservation at +39 0564 950993.

With the scottiglia, the lunch break becomes almost the highlight of the day; avoid squeezing it in right after a visit at a fast pace.
