The wine

Sàgona Primi Passi 2025, first Tuscan steps

There are wines that tell the story of a place without raising their voice. Sàgona Primi Passi 2025 comes from rural Tuscany, far from the most frequented routes, and favors a simple expression of the grape and the landscape. I also appreciate it for its aging in cement tanks, which accompanies the wine without marking it with wood notes.

On the slopes of the Pratomagno, a human-scale estate

The Sàgona estate sits on the slopes of the Pratomagno massif, in a discreet part of Tuscany, at about 500 meters of altitude. The project began in March 2012 with the desire to cultivate, preserve and tell the story of this territory. Here, the plots are small and farmed organically: vines, olive trees, fruit trees and dry crops coexist. The vines are on average forty years old, and no vineyard plot exceeds one hectare. Primi Passi, literally "first steps," offers a starting point for understanding this approach at a modest scale.

This white IGP Toscana wine is blended from Malvasía and Trebbiano, sourced from three vineyards located above 300 meters of altitude. Facing southwest, the plots rest on loamy and clay soils. The grapes are hand-harvested, then gently pressed in a manual vertical press. Fermentation proceeds spontaneously in cement tanks, where the wine then remains for five months. The sheet describes it as young, of a rather light to medium body and quite aromatic. It does not, however, specify the aromas on the nose or any particular flavors on the palate: I prefer not to attribute any to it by default. What can be retained is the choice of cask-free aging and the stated commitment to preserving the freshness and expression of the grape varieties. The wine is also indicated as organic and vegan.

At the table, simply and without ceremony

I would serve it as an aperitif, with seasonal vegetables, or at the table alongside white fish, white meats or a risotto. Aged cheeses can also find their place, depending on their intensity. The idea is not to seek a complicated pairing: the freshness and accessible profile described rather invite a legible cuisine, where the wine accompanies the dish without overwhelming it. For a more informal evening, a plate of vegetables and a few bites are enough to let it play its role. Primi Passi lives up to its name well: a first encounter with Sàgona and with a less-traveled Tuscany, to be opened out of curiosity, then shared quietly.
