Comment on noteThe wine
I invite you to discover a wine that whispers the very essence of Tuscany, an authentic expression of a generous terroir. Pigolaia is not just a wine, it is a story of sun-drenched hills and grapes bursting with character, a true favorite that I am delighted to share with you.
This red wine, the IGT Toscana Rosso Pigolaia, is the work of Cantina Di Montalcino, an estate nestled in the heart of Tuscany. It is here, on these hills where the Mediterranean climate and rich soil meet, that the grape varieties give their very best. Pigolaia 2021 is the fruit of a blend designed for balance: 80% Sangiovese, the undisputed king of the region, married with 20% Cabernet Sauvignon, bringing structure and depth. Fermentation takes place in temperature-controlled steel tanks, followed by malolactic fermentation in barrels, before aging in wooden casks that shapes its profile.
At first glance, it reveals itself in an intense ruby red color, with hues that, over time, will tend toward garnet. On the nose, the bouquet is complex and engaging: you will find predominant notes of ripe red fruits such as cherry and plum, enriched by spicy nuances of black pepper. A light breath of vanilla testifies to its elegant passage in barrel. On the palate, the wine is structured and well balanced, with a finely crafted tannic framework. The acidity is lively yet harmoniously integrated, supporting a long and persistent finish, marked by impressions of black fruits and a slight mineral vein.
To fully appreciate this Pigolaia, I recommend serving it at a temperature of around 18°C, ideally after letting it decant for a few hours so that it reveals all its richness. This wine is an ideal companion for the robust dishes of Tuscan cuisine: think of roasted red meats, game, or aged cheeses. It will enhance a dinner among friends or a convivial evening, and will also make a refined gift for lovers of great Tuscan wines. Let yourself be carried away by this invitation to a sensory journey, a true gem of Cantina Di Montalcino.
