Comment on noteThe wine
Today I invite you to a singular encounter, that of a wine that embodies the power and finesse of Tuscany. It is not a Chianti Classico, but a bold expression of the terroir, a purebred Cabernet Sauvignon that will surprise you with its elegance and depth.
Nestled in the heart of Chianti Classico, in Greve in Chianti, the Folonari estate, through its Tenuta di Nozzole, took the gamble of planting Cabernet Sauvignon. Il Pareto is the fruit of this boldness, a wine that reveals the potential of this international grape variety on Tuscan soils. It is a 100% Cabernet Sauvignon, 2017 vintage, which benefited from careful winemaking: a maceration with délestage in steel for about 22 days at 28°C, allowing optimal extraction of aromas and color.
This wine reveals itself in an intense, compact ruby robe with beautiful luminosity, already promising great depth. On the nose, you will discover a rich and complex aromatic profile, centered on black berry fruits: mirtillo, ribes and mora, enriched with notes of prugna and ciliegia. Touches of chocolate and spicy nuances add complexity without ever dominating. On the palate, the tannins are present but balanced, offering a moderately sustained structure and a pleasant persistence that makes the sorso harmonious. It is a wine that combines power and elegance, a true discovery for lovers of great reds.
To accompany this Il Pareto, I suggest pairings that will enhance its qualities. It pairs wonderfully with flavorful and structured dishes, such as Lepre in umido (hare in stew), carni rosse (red meats) or selvaggina (game). Carne rosse grigliate (grilled red meats), brasati (braised meats) and formaggi stagionati (aged cheeses) are also excellent companions. Serve it between 16 and 18 °C and, if time allows, let it breathe for a few moments before tasting. Whether for an informal moment with friends or a more formal occasion, this wine will delight your taste buds and those of your guests. It is an invitation to explore the richness of Tuscan wines beyond the beaten path.
