Comment on noteThe wine
Imagine a wine that whispers stories of Tuscan sun and cool nights, a wine that embodies power and delicacy. Il Pareto 2014 from Folonari is that unexpected encounter, a Cabernet Sauvignon that found its chosen land in the heart of Tuscany.
It is within the Tenuta di Nozzole, nestled in Greve in Chianti, between 330 and 370 meters above sea level, that this Cabernet Sauvignon takes root. Folonari, a name that resonates with the region's winemaking history, passionately cultivates this grape variety, unique of its kind in Tuscany. This wine is a pure product of its terroir, a 100% Cabernet Sauvignon that expresses all the richness of this land.
When you pour it, its color reveals a compact, limpid red. On the nose, I perceive notes of red fruits, pomegranate and dried plum, interwoven with more mysterious accents of incense and black pepper, with a spicy touch. On the palate, it offers a medium to full structure, with perceptible but well-integrated tannins, and a balance that showcases the substance without heaviness. The vinification, with fermentation in steel tanks and maceration of about four weeks, followed by aging of at least 30 months in barrique and bottle refinement, gives it this depth.
To fully appreciate this Pareto 2014, I recommend serving it between 16 and 18 °C. Don't hesitate to decant it for a few moments so it releases all its aromas. It will be the perfect accomplice to red meats, game and aged cheeses, highlighting their flavors with elegance. Let yourself be carried away by this wine which, I assure you, is a true discovery, a singular expression of Tuscany that will surprise you with its strength and finesse.
