Comment on noteThe wine
Imagine for a moment a bottle that has traversed the decades, holding within it the secrets of a distant vintage. This Cabreo Il Borgo 1987 is not just a wine, it is an invitation to a journey through time, an encounter with Tuscan history with every sip.
It is in the heart of the hills of Greve in Chianti, within the Vigneti delle Tenute del Cabreo, that the Folonari estate gave birth to this iconic wine. Tuscany, a land of ancient wine-growing traditions, offers an exceptional terroir here. This Cabreo Il Borgo is the fruit of a harmonious and, for its time, bold blend: 70% Sangiovese, the king grape variety of the region, married with 30% Cabernet Sauvignon, bringing structure and complexity.
The vinification of this great wine begins with fermentation in steel tanks, followed by 15 to 18 days of maceration, allowing optimal extraction of aromas and tannins. Its ageing is then meticulous: 16 to 18 months in French oak barriques, giving the wine its tertiary aromas and its patina. Finally, a minimum of 6 months of rest in the bottle refines its profile before it reaches you. To the eye, you will discover a colour that, with time, has evolved towards more brick-hued shades, a sign of beautiful maturity. On the nose, expect a symphony of evolved aromas: the freshness of bygone fruits mingles with the tertiary notes of wood, revealing a fascinating complexity. On the palate, the wine offers a silky touch, the tannins are now melted, the acidity perfectly integrated, and the structure, though more subdued than a young wine, retains a remarkable elegance. It is a wine that tells its age with grace and depth.
This Cabreo Il Borgo 1987 is a bottle that calls for contemplation. I recommend it with flavourful, rustic dishes, such as a faraona ripiena di porcini e mirtilli (guinea fowl stuffed with porcini mushrooms and blueberries), a braised meat dish or a good stew. It will also pair wonderfully with aged cheeses. But do not hesitate to enjoy it on its own, as a wine for meditation, to fully appreciate every nuance of its evolution. Serve it at a moderate temperature, between 16 and 18 °C, and plan a gentle decanting to separate any sediment and let its aromas blossom. It is an experience you will not regret.
