Comment on noteThe wine
Imagine for a moment traveling back in time, feeling the history of a vibrant land reveal itself in a glass. That is exactly what Cabreo Il Borgo 1983 offers you, an eloquent testament to Tuscan perseverance and elegance.
This mythical wine was born on the hills of Greve in Chianti, in the heart of Tuscany, within the Vigneti delle Tenute del Cabreo, property of the Folonari family. A place where Sangiovese, the region's king grape, reigns supreme, here blended at 70% with 30% Cabernet Sauvignon. It is this union that gives Cabreo Il Borgo its particularly distinctive structure and complexity.
On tasting, this 1983 vintage, with its intense garnet color typical of its age, reveals a complex and deep nose. You will perceive notes of ripe fruit, plum, but also subtle tertiary aromas such as leather, tobacco and light spices. On the palate, the balance is remarkable: the tannins are rounded, the structure retains beautiful freshness, and it all finishes on a persistent and pleasant finale. The vinification, with fermentation in steel tanks and maceration for 15 to 18 days at 26-28°C, followed by 16 to 18 months of aging in French oak barriques, has shaped this highly distinctive profile.
To fully appreciate this treasure, it is advisable to open it with care and let it breathe after exposure to light. A slow and delicate decanting may be necessary if you observe reduction or sediment. Serve it at around 16-18°C to reveal all its aromatic nuances. This wine pairs wonderfully with dishes rich in umami: think of a faraona ripiena con porcini e mirtilli, braised meats, flavorful roasts or aged cheeses. It is the ideal partner for a memorable dinner, a special occasion where you wish to offer an extraordinary tasting experience.
