The sfratto is this stick-shaped cake, typical of Pitigliano, Sovana and Sorano. It is made of a thin, crispy dough filled with a mixture of walnuts, honey, orange zest and spices. Its name, which means "eviction", refers to the edict expelling the Jews from Pitigliano in the 17th century. The Jews of the region created it as a sign of protest, and it became a symbol of their resilience. For you, traveler, the sfratto is a unique taste experience, a piece of history to bite into and a local specialty you won't find anywhere else.
