👥 Who it's for: Curious travelers, lovers of gastronomy and history
In the heart of Tuscan Maremma, in the town of Pitigliano, hides a gourmet treasure steeped in history: the Sfratto dei Goym. This biscuit is not just a simple sweet treat, but a true edible story, a testament to resilience and cultural blending.
Imagine a thin crispy dough enveloping a soft heart: golden honey, crushed walnuts, candied orange and lemon zest, enhanced with a hint of cinnamon and nutmeg. Its elongated shape of 20 to 25 centimeters already tells a story.
Pitigliano, nicknamed «Little Jerusalem», was a refuge for the Jewish communities fleeing persecution in the 16th century. In 1608, Cosimo II de' Medici forced the Jews to leave their homes for a ghetto, using a stick — the « sfratto » — to expel them.
This painful moment gave birth to the biscuit. The inhabitants transformed this symbol of oppression into an edible memorial, preserving their memory through a traditional recipe.
In Pitigliano, this biscuit is a Slow Food Presidium, guardian of a rich culinary tradition. It can be found in the village's artisan bakeries, perfect accompanied by a Tuscan wine or a coffee.
Each bite tells a story of survival, transmission and dignity. The Sfratto dei Goym is more than a biscuit: it is a living fragment of Tuscan history, a testament to humanity's ability to transform pain into beauty.
