What is the typical dish of Pitigliano?

À Pitigliano, the most emblematic specialty is the eviction of the goyim — but careful, it's a dessert, not a savory dish. This stick of pastry holds a filling of honey and nuts, flavored depending on the recipe with citrus fruits and spices. Its name means "expulsion" and its shape recalls the stick associated with the measures that forced the local Jewish community to move into the ghetto. It is a pastry tied to the Jewish history of Pitigliano, traditionally eaten at Christmas.

You can also look foracquacotta, a peasant soup from the Maremma, generally prepared with vegetables and served on bread, sometimes with an egg. It is less specific to Pitigliano than the sfratto, but it's an option if you were thinking of a savory dish instead. The sfratto can often be found in the village's shops or bakeries and may be available all year round, even though its traditional period is Christmas. Recipes vary: the pastry can be more or less crunchy and the spices more or less present.

The contrast between its severe name and its delicious side is the kind of detail that makes a specialty memorable; I would choose it over a dust-collecting souvenir.
