Comment on noteThe wine
Imagine for a moment, an authentic gem, a wine that whispers stories of Tuscan terroir. This Chianti Classico Riserva 2004, from the Folonari estate, is an invitation to a sensory journey, an encounter with depth and elegance.
It is in the heart of Chianti Classico, in Greve in Chianti, that the Tenuta di Nozzole, owned by Folonari, gives birth to this wine. La Forra is the name of this specific parcel, where Sangiovese, the king grape variety of Tuscany, expresses itself fully. Blended with 95% Sangiovese and completed by 5% Cabernet Sauvignon, this 2004 vintage benefited from careful vinification. The maceration, with delestage and pump-overs, took place at 28°C for about 20 days, allowing optimal extraction of aromas and color.
Once fermentation was complete, the wine rested for 3 months in steel tanks, before beginning a long aging of 16 to 18 months in 500-liter French oak barrels. This crucial step gives it its complexity and structure. Finally, 6 additional months in the bottle allowed this Chianti Classico Riserva to perfect its balance. In the glass, you will discover an evolved ruby color, testifying to its age and maturity. On the nose, fragrances of ripe red fruits, Morello cherry, mingle with tertiary notes evoking undergrowth, delicate spices and subtle hints of leather. On the palate, the structure is compact, the balance between acidity and tannins is remarkably integrated, offering a delicate sensation and a long finish that invites slow, thoughtful tasting.
This Chianti Classico Riserva 2004 is the ideal companion for traditional dishes and characterful preparations. I particularly recommend it with a piccione ripieno al tartufo nero, accompanied by cipolle and carote glassate. To appreciate all its nuances, serve it at a moderate temperature and, if possible, decant it a few hours before tasting so that it reveals its full aromatic palette. It is a bottle that lends itself to contemplation, to those moments when you wish to savor the present moment and share a memorable tasting experience. A wine to be carefully preserved, controlling light and temperature, to perhaps see it evolve further.
