Comment on noteOur opinion
Listen, if you're looking for a table in Bagno Vignoni, Tramanda' Ristorante Vineria is the address that comes up. Not for the fuss, but because they're set right on the main piazza, with a terrace that looks straight out over the thermal baths. That's what makes the difference, not the decor of some Milanese designer.
The place plays the local produce card, without distorting it, but with a revisited touch. We're talking Mediterranean cuisine, but above all Tuscan, you see the style. Guests often talk about the Fiorentina, and the Pici all'Aglione. That's the foundation, and when it's done well, it's more than enough.
They also offer slightly more elaborate dishes, like the Mousse di fegatini glassata al lampone, served with their homemade cereal and dried fruit bread, and sweet-and-sour red onion. Or the Tortino di pecorino di Pienza, with rosé-poached pears and honey-caramelized walnuts. That shows they don't settle for the bare minimum. The Tartare di chianina IGP with its truffle spuma and hazelnut wafer gives you an idea of their approach: classics with a little extra, without falling into showiness. They highlight high-quality local ingredients, that's what matters, simplicity and seasonality.
If you're in Bagno Vignoni and want to eat local without getting ripped off, Tramanda' is a safe bet. The reputation is solid, and not just on the platforms. The service is often described as warm and prepared. It's a table that respects the product and the place it's in, and to me, that's what makes real cuisine. You'll pay around €45 per person, which is fair for cuisine that doesn't take you for a passing tourist.
