What is the traditional craftsmanship of Campagnatico?

À Campagnatico, the most clearly attested traditional craftsmanship is culinary: the making by hand of the tortelli maremmanistuffed with ricotta and spinach, and rustic pastas like pici. It is better to present it as a domestic and gastronomic know-how than as a specialty of objects made in local workshops.

This manual work can be found in the preparations of the Sagra di Campagnatico, where the tortelli are shaped by hand and served with other local recipes, including snails in sauce. On the other hand, I cannot confidently point to a tradition specific to the village of pottery, weaving or blacksmithing: these activities exist in the Maremma in the broad sense, but that is not enough to make them the emblematic craftsmanship of Campagnatico. If you want to see or taste this know-how, look into the local food festivals, often held in summer; demonstrations are not necessarily offered all year round.

It is a craftsmanship that is shared more than it is displayed: the gesture takes on its full meaning when it brings people together around the table.
