Phytoalimurgy is the study and use of edible wild plants : knowing how to identify them, knowing which parts can be eaten and how to prepare them. In Italian, the term is also written fitoalimurgia. It is associated with eating during times of scarcity, but today it also refers to a culinary practice and a body of ethnobotanical knowledge.
In Tuscany, wild plants are used in simple dishes, for example cooked vegetables, salads or frittatas. Uses and recipes vary according to the plants and the places; it is therefore not a uniform cuisine nor a promise of easy foraging.
The important point is caution: some plants look alike, and a misidentification can be dangerous. Do not eat a wild plant on the basis of a photo or a name you have heard; go out with a knowledgeable person and also check that foraging is allowed where you have chosen to go.
