Comment on noteThe wine
Let me guide you toward a discovery that whispers the authenticity of Tuscany. This Capogatto from Poggio Scalette is not a wine that shouts, but one that tells, with discreet elegance, the story of its terroir. It is that gem shared among connoisseurs, a well-kept secret of the valley.
We are in Ruffoli, in the heart of Greve in Chianti, where the Poggio Scalette estate cultivates its vines with passion. This wine, classified IGT Alta Valle della Greve, is a bold and harmonious blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, each contributing its equal share to the final balance. It is the expression of a unique microclimate, shaped by the Tuscan hills.
Its medium ruby color invites you to taste. On the nose, you will perceive aromas of ripe black fruits, of violet, enhanced by spicy notes and a touch of tobacco, all enveloped in a subtle balsamic nuance. On the palate, it reveals a beautiful structure, with present but perfectly integrated tannins, offering a discreet persistence and a frank balance. Fermentation takes place over 12 days in stainless steel tanks, followed by 18 months of aging in barriques, then a minimum maturation of 8 months in bottle, giving it its complexity and suppleness.
Imagine this wine accompanying a convivial dinner. It pairs wonderfully with red meats, roasts, lamb and aged cheeses. It is the ideal companion for informal occasions, but also for elevating an everyday meal. I recommend opening it a few minutes before serving, at a slightly refreshed temperature, so that it reveals its full aromatic palette. It is an invitation to savor the moment, in the Tuscan way.
