Home › Glossary › olivastra seggianese
The Olivastra seggianese is the emblematic olive tree of Monte Amiata, an ancient tree that produces exceptional olives. You can recognize it by its dark green leaves and fleshy fruits. Its olive oil, often single-cultivar, is mild, with notes of almond and artichoke, and a slight bitterness on the finish. If you travel in Maremma, you will find it on the tables of agritourism farms and local restaurants, and you can visit mills to taste it directly. It is a strong marker of the region's gastronomic identity.
