A caseificio, in Maremma, is much more than a simple cheese factory. It's the place where raw milk, often from sheep, sometimes from cows or goats, is transformed into pecorino, ricotta or other local specialties. You see the process, you smell the aromas, and above all, you taste directly at the source. It's an immersion in local agricultural know-how, a meeting with the producers. You won't find industrial cheeses here, but authentic products that tell the story of the land and the animals that graze on it. It's an essential step to understanding Maremman gastronomy.
