bruschetta

bruschetta

Bruschetta is toasted bread, rubbed with garlic, drizzled with extra virgin olive oil and often topped with fresh diced tomatoes. Here in Maremma, the oil is local, the garlic is powerful and the tomatoes are bursting with sunshine. Forget the soft or overly topped versions you may know. True maremmana bruschetta is all about the simplicity of the product speaking for itself. You'll find it as an antipasto, sometimes offered while you wait for your order, and it's an excellent way to judge the quality of the restaurant's olive oil.
