Comment on noteOur opinion
Here, you're not in just any restaurant. Il Gallinaccio is the place that serves you Maremma directly, with vegetables from their own organic garden and products from the farm. It's the real deal, not tourist folklore.
The house showcases Tuscan cuisine that respects seasonality — that's the foundation. Forget the never-changing, endless menus. Here, you'll get products that come from their orto biologico, their vegetable garden. That means "farm-to-table" vegetables, but also their oil, their grains, their flours, their bread and their pasta. It's rare to find such self-sufficiency.
You can expect dishes like the Tagliere del Guadalupe, which should give you a good overview of local flavors, or the Antipasto maremmano. If you want something a bit more refined, the Fiore di zucca ripieno di ricotta di bufala in tempura with its gazpacho and vegetable chips gives you an idea of the sophistication without betraying the roots. Chef Natascia Longhi works with animal proteins from the surrounding area and locally caught fish, so you get real traceability. The setting is that of an agriturismo, the Guadalupe Tuscany Resort, with the option to eat outside in the garden in summer or on the veranda. It's a rural atmosphere, far from the hustle and bustle, perfect for appreciating what's on the plate.
If you're looking for Tuscan cuisine that doesn't cheat, with ingredients that literally come from the ground you're standing on, this place is for you. It's the guarantee of a rooted plate, where every product has a local story. You'll pay around €60 per person, but you get the assurance of provenance and freshness that few others can offer.
