Comment on noteThe wine
I invite you to discover O'Lillo, an IGT Toscana Rosso from the Baracchi estate. It's the kind of wine that, without ostentation, reveals the generosity of Tuscany and lends itself wonderfully to your moments of sharing. It embodies the perfect balance between tradition and accessibility, a true gem for lovers of authentic wines.
Nestled in the heart of the Valdichiana, near the charming Cortona, the Baracchi estate passionately cultivates a blend of grape varieties that speak of their land. This wine, O'Lillo, is the fruit of a harmonious encounter between Cabernet Sauvignon, Merlot, Sangiovese and Syrah. Each bunch is carefully picked, then vinification begins with gentle destemming, followed by fermentation in stainless steel tanks. A maceration of 20 to 24 days extracts the aromas and color, before the wine is bottled after six months of aging, then refined for three additional months in the bottle.
To the eye, O'Lillo reveals itself in a ruby red robe of medium intensity, a visual invitation to tasting. On the nose, you will be charmed by aromas of ripe red fruits, notably cherry and blackcurrant, accompanied by delicately spicy notes of black pepper and a touch of tobacco and undergrowth. On the palate, this wine offers a moderate structure, with present but supple tannins, making the tasting smooth and pleasant. Its persistence, without being exuberant, is that of a well-made wine, which does not seek to impress but to seduce through its balance.
This wine is an ideal companion for your everyday meals. I particularly recommend it with red meat dishes, pork, or a selection of Tuscan cured meats. Imagine it alongside a good plate of pasta with ragù, where its fruit aromas and spicy notes will enhance the richness of the sauce. It also pairs very well with medium-aged cheeses. Serve it at a temperature of 16-18 °C; a brief decanting can help reveal the full complexity of its aromas. O'Lillo is an invitation to conviviality, an unpretentious wine that will enrich your moments of sharing with a touch of Tuscan authenticity.
