castagnole

castagnole

You will find castagnole mostly at carnival time. They are small balls of fried dough, often flavored with orange or lemon zest, sometimes even with a bit of liqueur. They can be dusted with icing sugar or dipped in honey. In Maremma, it is a seasonal pastry, a marker of passing time. If you travel in February or March, you will see them in the pastry shops or at the markets. It is simple, delicious, and it plunges you directly into the atmosphere of local festivities. A sweet treat to enjoy on the go.
