Comment on noteThe wine
Today I invite you to discover an unexpected facet of Tuscany, far from the beaten paths of Chianti Classico. This wine is an encounter with the pure expression of Cabernet Sauvignon, enhanced by the expertise of a historic estate. Imagine for a moment power and finesse united in a single glass.
Nestled in the heart of Chianti Classico, in Greve in Chianti, the Folonari estate, through its Tenuta di Nozzole, is a major player in Tuscan viticulture. It is here, on these blessed lands, that this Toscana Rosso I.G.T. takes root. Unlike many wines of the region, this one is a single-varietal wine, made entirely from Cabernet Sauvignon, a bold choice that reveals a strong personality.
The 2020 vintage offers us a bright, radiant ruby color. On the nose, you will be charmed by a forthright profile, where ripe red fruits dominate, evoking pomegranate, morello cherry and dried plum. More complex notes of incense, laurel and a hint of pepper complete this rich bouquet. On the palate, this wine reveals itself with a medium-full body, well-integrated tannins and a balanced acidity that carries the palate. Fermentation takes place in steel tanks, followed by maceration for about four weeks. The aging is particularly careful, with at least 30 months spent in barriques, then bottle refinement to perfect its balance.
This wine is a true chameleon at the table. I recommend it with grilled red meats or roasts, where its structure can stand up to powerful flavors. It is also excellent with game and aged cheeses. Feel free to pair it with tomato sauce dishes or specialties of regional Italian cuisine. Serve it between 16 and 18 °C and remember to open it a few minutes before tasting so it can fully express its aromas. It is an invitation to conviviality, a wine to be shared and savored, even on informal occasions.
