Comment on noteThe wine
Imagine yourself in the heart of Tuscany, where the sun caresses the vines and every sip tells a story. Today I invite you to discover a wine that embodies this magic: the Il Pareto 2020 from the Tenuta di Nozzole. It is a bold and refined expression of Cabernet Sauvignon, a true hidden gem.
This wine is the fruit of the meticulous work of the Folonari estate, within its Tenuta di Nozzole, nestled in Greve in Chianti. Although this region is famous for its Sangiovese, the Tenuta di Nozzole has managed to tame Cabernet Sauvignon to draw a unique essence from it. This 100% Cabernet Sauvignon, 2020 vintage, is a testament to their know-how and their boldness.
From the very first glance, its color envelops you in a deep red, a promise of beautiful concentration. On the nose, you will be charmed by aromas of blueberry, blackcurrant and blackberry, interwoven with notes of dark chocolate, tobacco and a touch of cedar. On the palate, its structure is concrete, without heaviness, with tannins that are present but perfectly balanced. Its maceration, with délestage and pump-overs at 28°C for about 22 days, followed by two months in steel and then twenty-four months in French oak barrels, gives it this complexity and this delicate persistence.
To accompany this Toscana Rosso I.G.T., I suggest dishes that will be able to converse with its richness. Imagine it alongside a hare in civet with cauliflower and truffle purée, a sublime pairing that reveals all its depth. It will also pair wonderfully with grilled red meats, flavorful roasts or hard cheeses. Don't hesitate to open it a little before serving, or even to decant it, so that it can fully express all its aromas.
This wine is an invitation to conviviality, to sharing an exceptional moment. Whether for a special occasion or simply for the pleasure of discovering a great Tuscan wine, the Il Pareto 2020 is an experience that I warmly recommend. Let yourself be carried away by this authentic expression of Tuscany, a wine that will speak to you of passion and terroir.
