Comment on noteThe wine
Imagine for a moment a journey through time, a sip that transports you to the heart of Tuscany more than three decades ago. That is what this Pareto 1987 offers you, a wine that has traversed the years with rare elegance, a silent witness to ancestral know-how.
This wine was born within the Tenuta di Nozzole, an emblematic estate nestled in Greve in Chianti, in the heart of this Tuscany I love so much. It is there, on these blessed lands, that Folonari cultivated with passion the Cabernet Sauvignon, the grape variety that makes up 100% of this historic cuvée. The maceration, carried out with racking and pump-overs at 28°C for about 22 days, allowed all the richness of this grape to be extracted.
To the eye, you will discover a color that has taken its time to mature, tending toward garnet with subtle orange highlights, a promise of evolution. On the nose, I perceive complex and deep aromas: evolved notes of blackcurrant and blackberry, to which chocolate and spices are added, sometimes even touches of dried herbs. On the palate, expect a soft texture, where the tannins have melted over time, offering remarkable harmony. This wine first spent two months in steel tanks, then aged for 24 months in 225-liter barriques, thus refining its character.
To accompany this gem, I suggest dishes that will honor its complexity. Picture it alongside a jugged hare, served with truffled cauliflower purée, a documented pairing that promises a symphony of flavors. Roasted meats or game in sauce will also be wonderful companions, as will aged cheeses. I advise you to serve it in a large glass, and perhaps with a brief decanting, to allow it to open up fully and reveal all its secrets. It is more than a tasting, it is an experience, a privileged moment you share with the history of a region and a craft.
