Hidden Tuscany Rating
Cabernet Sauvignon 100% from the Vigneto Il Pareto in Greve in Chianti, detailed vinification and ageing, precise food pairings. Main reservation: IGT without distinction and a price of €144.88 high for this rank.
IGT with no mention of the Nozzole sub-zone in the appellation, Cabernet Sauvignon 100% with no connection to Tuscan grape varieties: limited local anchoring.
No distinction or guide mentioned; producer Folonari named but without any reputation attested in the sources.
At €144.88 for an undistinguished Tuscan IGT, the price is high for what is described; the crossed-out price is not enough to justify it.
Precise pairings (lièvre in umido, purè di cavolfiore e tartufo), detailed aromatic profile and serving at 16–18°C: good use at the table.
Folonari estate located in Greve in Chianti, precise vinification (22 days at 28°C) and detailed ageing (16–18 months French oak, 6 months in bottle).

Comment on noteThe wine
Imagine for a moment: the Tuscan sun caressing Cabernet Sauvignon vines, a promise of depth and elegance. This is the very essence of Il Pareto 2015, a singular expression that transports you to the heart of this blessed land.
This wine, you owe it to the Folonari estate, and more precisely to the Vigneto Il Pareto, within the Tenuta di Nozzole, nestled in Greve in Chianti. It is there, in this prestigious appellation, that Cabernet Sauvignon, the king grape variety of Bordeaux, found a second homeland. Carefully planted, it benefits from a microclimate and soils that give it an entirely Tuscan identity. This 2015 vintage is a pure Cabernet Sauvignon, a demonstration of what this grape variety can offer when cultivated with passion and expertise.
From the very first glance, you will be charmed by its intense red color. On the nose, a symphony of red fruits and pomegranate intertwines with more exotic notes of banana, before giving way to more complex touches of tobacco, vanilla and cocoa. On the palate, this wine reveals all its structure. The tannins are present but well integrated, offering beautiful persistence. You will find there that harmony between fruit and a sapidity that invites tasting. The vinification, marked by a 22-day maceration at 28°C with délestage and pump-overs, followed by 16 to 18 months of aging in French oak barrels and 6 months in bottle, shapes a wine of great complexity.
To fully appreciate this Il Pareto 2015, I suggest you serve it at around 16-18°C, and a brief decanting will only enhance its aromas. Picture it alongside a hare stew, accompanied by cauliflower and truffle purée – a bold and memorable food and wine pairing. It will also be an ideal companion for grilled red meats, roasts or hard cheeses. This is a wine that lends itself as well to grand occasions as to more informal moments of sharing, an invitation to discovery and pleasure.
