For a classic stay in Italy, I would choose Airalo if you want to control your budget and a few gigabytes are enough for you: its Italian plan of 10 GB over 30 days costs about $19. If you consume a lot of data and prefer not to monitor your usage, Holafly offers advertised unlimited data, around €22.50 for 7 days ; tu paies donc davantage pour la tranquillité, pas pour une meilleure couverture garantie. Les tarifs peuvent varier au moment de l’achat.
Pour la Maremma and country roads, don't count on an eSIM to eliminate areas with no signal: reception depends on the local operator and can be irregular in isolated spots. Check the coverage map of the networks used by the plan before paying. Holafly states it uses Vodafone Italy and WINDTRE, mais précise que le signal peut faiblir hors des zones habitées.
Before purchasing, check that your phone is eSIM compatible and unlocked. These travel plans are mainly designed for data: keep your usual line to receive important calls or SMS, and use WhatsApp to call. If you're staying more than a week or often watch videos, compare the price of a more generous limited plan with the unlimited option; for maps, messages and browsing, 10 GB may be enough if you use Wi-Fi when it's available.
