What to see in Montemerano?

À Montemerano, above all visit the medieval center on foot: go through the Porta del Ponte, suis la Via Italia, then let yourself be guided through the alleys up to the Piazza del Castello. The square is pretty, but the village is small: allow about 1 to 2 hours to stroll and see the main monuments, more if you stop to eat.

For heritage, go into the church San Giorgio, on the Church square. It houses 15th-century works, including the Madonna della Gattaiola, a painting pierced with a round hole whose history is debated. The church may be closed depending on hours or services; better to check on site rather than count on it. Also note the Pieve di San Lorenzo, now converted into a theater, as well as the remains of the fortifications around the village. The free parking lots are located outside the historic center, a few minutes' walk away; so avoid driving into the alleys. Montemerano combines easily with a stop at the Saturnia thermal baths, a few kilometers away, but don't plan a whole day for the village alone.

I would keep Montemerano as a gentle interlude after Saturnia: here, it's better to savor the small details than to run from one monument to another.
