If you want flexible hours, restaurants within walking distance and predictable comfort, choose the hotel; if you want to wake up in the countryside and you have a car, an agriturismo will give you a stay more rooted in the Tuscan landscape. But the word guarantees neither a working farm nor home-cooked meals: services vary greatly from one place to another.
In Val d'Orcia, for example, Siena and Pienza are about 60 km away, i.e. around 1 h to 1 h 15 by car depending on the route and traffic; from a remote agriturismo, every outing adds to that journey. Without a car, favour a hotel in town or an agriturismo close to a village, and check the buses and shuttles before booking: the last few miles can complicate your stay.
My compromise: 2 or 3 nights in an agriturismo to enjoy the peace and quiet, then a hotel in Florence or Siena if you want to visit without driving or looking for somewhere to have dinner. In July-August, book early and check whether the pool, the restaurant and breakfast are actually included or open on your dates. If your number one criterion is regular service, don't choose the countryside just for the image: the isolation can quickly become a burden.
