A true family trattoria in Maremma is recognized less by its checkered tablecloths than by a short menu, by dishes tied to the local territory, and by someone who can simply tell you what is homemade. Look for tortelli maremmani filled with ricotta and chard or spinach, theacquacotta when the season allows, or pappardelle with wild boar. Ask whether the pasta is made on site and where the products come from: a precise answer is worth more than rustic decor. An endless menu, identical all year round, is not proof of family cooking — but a small menu doesn't guarantee everything is homemade either.
Also observe who frequents the dining room: locals at lunchtime are a clue, not a verdict. Opening hours may be reduced or irregular, especially in the off-season; call or book the same day if you're making a detour. Budget-wise, a plate of tortelli often costs around 13 to 16 € on menus consulted recently, with variations depending on the place and location. Don't necessarily expect a modest bill near the coast, nor very fast service when the dining room is full. Finally, ask for the house wine and its price by the glass or carafe before ordering: "family-style" doesn't automatically mean cheap.
