Comment on noteThe wine
Imagine yourself, in the heart of Tuscany, discovering a hidden treasure. This Cabreo Il Borgo 1998 is not just a wine, it is an invitation to a sensory journey, a liquid story that whispers the secrets of an exceptional terroir. It embodies timeless elegance, a gem for palates in search of authenticity.
The Folonari estate, through its Vigneti delle Tenute del Cabreo, offers us this jewel born in Greve in Chianti. It is here, in this Toscana IGT appellation, that Sangiovese, the region's emblematic grape variety, meets Cabernet Sauvignon and Merlot. This union, the fruit of fermentation in steel tanks and maceration of about four weeks, gives birth to a wine of remarkable depth. It then matured patiently, at least 24 months in barrique, refining its complexity.
When you pour this 1998 vintage, you are immediately struck by its garnet color with orangish highlights, a testament to its long evolution. On the nose, it is a symphony of tertiary sensations that welcomes you: notes of marasca cherry and ripe cherry blend with more complex aromas of chocolate, tobacco and vanilla, with a mysterious touch of incense. On the palate, the tannic structure is of incredible finesse, polished by time, but still supported by a central structure that ensures perfect balance. The persistence is measured, inviting each sip to explore its delicate nuances.
This Cabreo Il Borgo 1998 is an ideal companion for special moments. I recommend it with flavorful dishes: think of roasted red meats, fragrant game, or even a selection of aged cheeses. It will also enhance a dish of wild mushrooms, revealing all its richness. Serve it at a moderate temperature, and do not hesitate to decant it if you want it to reveal all its facets after so many years spent in the bottle. It is an experience to savor, an enchanted interlude that will transport you directly under the Tuscan sun.
