Comment on noteThe wine
Imagine yourself, in the heart of Tuscany, discovering a wine that whispers stories of sun and tradition. Cabreo Il Borgo 2021, in its wooden case, is not just a bottle; it is an invitation to a sensory journey, a promise of authenticity that I am delighted to share with you.
This precious wine comes to us from Vigneti Tenute del Cabreo, a Folonari estate nestled in Greve in Chianti, specifically in the localities of Zano and Casa di Sala. It is there, on these blessed Tuscan lands, that Sangiovese, Cabernet Sauvignon and Merlot unite to give birth to this unique expression. The vinification follows a respectful path: fermentation in steel vats, with maceration of about four weeks, allowing the aromas to fully develop.
In your glass, you will first be charmed by its ruby color of medium intensity, a color that invites discovery. On the nose, aromas of ripe red fruits blossom, interlaced with light spicy nuances and delicate floral accents. I also perceive herbaceous notes, of beautiful clarity, which add a fascinating complexity. On the palate, Cabreo Il Borgo reveals itself balanced, its tannins are perfectly integrated, and its structure supports a freshness without exuberance. The persistence is beautiful, with fruity returns and a touch of sapidity that make it a very pleasant wine to drink.
This wine is a true gastronomic chameleon. I warmly recommend it with arrosti, those flavorful roasts that are the pride of Tuscan cuisine, or with a fine piece of light game. It will also pair wonderfully with aged cheeses, where its structure and freshness will enhance the flavors. But do not hesitate to enjoy it on its own, for a moment of pure contemplation. To appreciate all its qualities, I advise you to open it a few hours in advance, or to decant it if you are in a hurry. It is an experience you will not regret.
