Tuff is that light volcanic rock you see everywhere in Maremma. It's what gives that very distinctive ochre color to villages like Pitigliano or Sorano. It's porous and easy to carve, which explains the countless caves and troglodyte dwellings you're going to discover. It's also because of it that the roads can be a bit bumpy in places, as it erodes easily. But it's this very same characteristic that made it possible to create these unique hilltop towns, carved straight out of the rock. You'll walk on it, touch it, see it everywhere — it is the very identity of these places.
