A winery, in Maremma, is much more than a simple underground warehouse. It is the place where wine is produced and aged, often a family business where you can meet the winemakers. It is called cantina in Italian. You go there for tastings, of course, but also to understand the process, see the barrels, and sometimes buy directly. It is where the local wine identity is made, from Morellino di Scansano to Ansonica. Don't always expect ultramodern facilities; many retain a rustic and authentic charm, a reflection of their history.
